A much misunderstood cuisine, Irish food is undergoing a modern revival.
Ingredients are locally sourced, and all the more delicious for it. Seafood is abundant, with oysters, scallops and mackerel coming from off the coast. Local butchers supply beef, lamb, geese and venison, a native speciality now being rediscovered. Farmers markets are packed with golden butter, black pudding, soda bread and award-winning smoked cheese. Plus, of course, there’s always the humble potato.
